Quit Your Job And Make Jam

Jam making probably began in The Middle East - the first known recipe book ('Of Culinary Matters', written by the splendidly-named Marcus Gavius Apicius in the first century AD) included recipes for fruit preserves, and it's thought that jam was introduced to Europe by people returning from The Crusades. By the late Middle Ages it had become popular in Royal circles, with Louis XIV of France concluding his lavish banquets with fruit preserves served in silver dishes. Closer to home the British industry standard (as decided in the 1920s by scientists at The University Of Bristol) states that a jam should be at least 60% sugar as this combines with the pectin that gets released as the fruit boils to give jam it's classic thick texture. You can't say that you don't learn anything here can you?
