The term 'cupcake' was first used in Eliza Leslie's 'Seventy Five Receipts For Pastry, Cakes And Sweetmeats' cookbook way back in 1828. They were originally made in - you've guessed it! - cups and were also known as Fairy Cakes as they were thought to be small enough for fairies to eat. It sounds funny, but it's true. The term was also used to describe cakes whose ingredients were measured out in cups rather than by weight. Many years later in 2005 the first cupcake bakery 'Sprinkles' opened in the somewhat unlikely location of Beverly Hills - it was started by two investment bankers who sold over 2,000 cupcakes in the first week that they were open.
